Can you believe it’s April already? Where has the time gone? We have a few things going on for April. The Airdrie Home and Lifestyle Show is going on at Genesis Place on April 12th and 13th and Dr. Hubert will be there with a booth representing Access Chiropractic! She will be doing spinal scans so stop by and say “Hello!”

Easter is also fast approaching and that means the chiropractic portion of the clinic will be closed for Good Friday, April 18th, and Easter Monday, April 21st. We will open for regular hours on Tuesday, April 22nd, at 9am!

Sugar is found in everything – from sweet treats to so-called “healthy” foods. While natural sugar in fruit and milk is generally fine in moderation, added sugar can wreak havoc on your health. No Cook Zucchini Noodles with Pesto

This is such a simple, fresh, and healthy recipe just perfect for the spring! Even if you're not a zucchini fan, this is something that you will like! This requires using a spiralizer. If you do not have one, GET ONE! You will use this tool over and over and over once you have it. It makes your food more interesting!

Ingredients

  • 3 zucchini's

  • ½ cup pesto

  • 1 bell pepper sliced thinly lengthwise

  • handful of cherry tomatoes

  • 2 chicken breasts (cooked, diced, and cooled)

  • ½ tsp of salt

  • 1 Tbsp olive oil

  • ground pepper to taste

  • shredded parmesan to taste

Directions

  • Take zucchini's and run them through your spiralizer. You can choose your thickness but I suggest using the smallest blade. Put zucchini noodles in colander and add salt and mix. Let it sit for 10 minutes (this softens the zucchini a bit) and then rinse with water and squeeze out water. Move to bowl and drizzle with olive oil.

  • Take your chicken, peppers, and tomatoes and mix in with noodles. Add basil pesto and mix again. Serve and sprinkle with fresh ground pepper and parmesan cheese!
